Creation of quality products
Peter paul's production of desiccated coconut is an elaborate food processing system, with processes monitored at each control point by inspection and testing under product
Quality assurance. Production begins with the rigorous screening of coconuts to ensure That only fresh and mature nuts are accepted. The coconut shell removal is accomplished by mechanical shelling machine, followed by manual paring, selection and inspection. For desiccated coconut, the meat is ground, sterilized, dried, sifted, packed, quarantined for clearance, and then stored for eventual shipment. (sweetened varieties of desiccated coconut are now also available). For coconut milk and cream, the meat passes through a screw press to obtain the milk extract, filtered, standardized into milk or cream, pasteurized, homogenized, packed and then sterilized in state-of-the-art autoclave system. For virgin coconut oil and coconut fiber/flour production and packaging, new specialized equipment and modernized packaging concepts have been developed and used.
